A favourite recipe of in my family! My mum is just so creative and talented when it comes to cooking a meal!
Quiche is such a quick, easy, nutritious and delicious recipe for all the family to enjoy! Dress is up or dress it down! Batch cook it! It can be eaten all year round! This dish can be so versatile- it is great to rustle up from any left over veg, cheese or eggs that are lurking in the fridge.
Might I also add this recipe was requested by my good friend Hev! She is fairly broadening her horizons in the kitchen with my mums recipes 😉 Enjoy Hev!
Serves 4-6
Ingredients
4x Egg
10 ml Milk
225 g Plain Flour
2 tbsp Water
Tsp Garlic paste
100 g Cheese (cheddar and spicy perhaps?) Up to you!
150g Butter (to grease)
Salt to season
(You can mix up the flavours), Add Plum tomatoes, chorizo and spinach t this one.
Salad to garnish
Method
Making the short crust pastry
Set oven to 180 degrees (Fan)
Measure flour into a bowl; add butter and rub into bread crumbs. Gradually add small amounts of water and fold in with the flat side of a knife until a dough is formed. (Try not to add too much water or it will be too sticky). If that happens add more flour until firm dough is formed.


Sprinkle some plain flour on a clean worktop and roll out your pastry to fit the size of the flan tin.


Grease tray with a bit of butter by using a piece of kitchen roll or the paper lid on the butter.

One pastry is successfully rolled out carefully place your pastry on the flan dish and press into the sides carefully. Cut the remaining bits of pastry by gliding a sharp knife around the edge of the flan dish. (Do with care) ❤

Blind bake the pastry: Cover the pastry with grease proof paper and place some pasta or dried peas on top to weigh the paper down. Blind bake in the oven for 10 minutes.
Take tray out oven and remove the peas/ pasta and grease paper.
Put oven down to 160 degrees (fan)
Making the quiche mix
Crack six eggs in a large bowl and whisk, add milk to the bowl and add the grated cheeses of your choice. Mix.



Dice chorizo and bacon and tomato’s. (Taking your food safety precautions into consideration. 😉

Heat a small amount of butter/garlic paste in a frying pan and sauté the chorizo, tomato and bacon.

Add your chosen ingredients to the egg mix. (Bacon, spinach, bacon, tomatoes). Season with salt.

Place the flan dish on a tray and proceed to pour the quiche liquid into the pastry case that you blind baked before. Carefully put into the oven for 30-40 minutes. To test if cooked put a knife in the centre. If the knife is clean it is ready to take out the oven AND EAT!

Serve with a nice green salad, potato salad and coleslaw. 🙂 Can be eaten hot or cold! 🙂
